Bump LTTNG_UST_PROVIDER_MAJOR from 1 to 2

The introduction of nested arrays and sequences requires to bump the
provider major version from 1 to 2. Newer lttng-ust are backward
compatible with older probes, but newer probes cannot be used by
older lttng-ust versions.
